Principle duties and responsibilities (Essential Functions) include: 


Key Job Functions

Reviews food and beverage forecasts submitted by each department manager to ensure proper monitoring and control of payroll costs.

Analyzes information concerning facility operation such as daily food sales, patron attendance, and labor costs to prepare budget and to maintain cost control of facility operations.

Review and approve all food and beverage costs and closely monitors expenses vs. budget.

Establishes prices and menus for each F&B outlet, based on profitability and local competition.

Establishes the Annual Plan, monthly forecast, goals and objectives and marketing action plan. 

Inspects and tastes prepared foods to maintain quality standards and sanitation regulations.

Responsible for the hiring, firing, discipline, training and professional development of F&B management and employees.

Responsible for driving revenues in banquets/catering and all outlets.

Evaluates all F&B profit improvement opportunities.

Supervisory Responsibilities

Manages management team in Banquets, Food Prep, Stewarding, Pastry, Desire Oyster Bar, Restaurant R’evolution, Beverage Outlets and Room Service. Is responsible for the overall direction, coordination, and evaluation of these units. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving work related issues and cases.

Other duties and responsibilities may be assigned. The employee is expected to work in other areas of the hotel when needed to assist operations to perform job duties not necessarily contained in this job description.

Qualifications and Skills 


A candidate for this position must possess the following applicable knowledge, skills and abilities and be able to demonstrate and provide applicable examples to support his/her competency.


Ability to communicate, both verbally and written, effectively with guests, vendors and co-workers.

Ability to motivate and collaborate with multiple departments.

Must read, write and speak the English language fluently.

Strong Microsoft Office skills with emphasis on Excel.

Ability to identify and resolve problems in a timely manner.

Ability to develop and complete projects on time and within budget.

Education and/or Experience


Bachelor's degree (B. A.) from four-year College or university; or one to two years related experience and/or training; or equivalent combination of education and experience. Diversified Food and Beverage experience in Food & Beverage Outlets and Banquets Operations. Experience in fine dining and free standing restaurants is desirable.
